Since its debut in 2006, the Vietnam Culinary Challenge has established itself as a prestigious and highly regarded competition for Vietnam’s culinary community.Organised by the Saigon Professional Chefs Guild and judged by a distinguished panel of renowned chefs from the region, the 5th edition Vietnam Culinary Challenge 2013 will see local chefs from reputable restaurants and hotels compete in a three-day series of ‘cook-offs’ for the coveted title of Grand Champion. |

About Saigon Professional Chefs Guild
The Saigon Professional Chefs Guild is an organisation for cooks, chefs and pastry chefs from all professional levels across various industries. As an organisation representing Vietnam’s culinary spirit, it is our task to promote the professional and social interests of our members. We collaborate with specialised public and private organisations and institutions in the hospitality and catering industry. The Guild strives to improve networking among existing and new members.
To improve the culinary skills of its members as well as to raise its professional profile, The Guild organises the Vietnam Culinary Challenge. The objectives of the Challenge are:
- Promote Vietnam’s culinary standards
- Members to gain experience on a competitive platform
- Share culinary expertise, knowledge and ideas with other chefs within the regional culinary community

The Vietnam Barista Competition attracts top-level baristas who will compete; as well as café management and coffee industry buyers who will witness the crowning of the next barista champion after three days of keen competition. The winner will be given the honour to represent Vietnam at the FHA Barista Challenge 2014, which will be held at Food&HotelAsia2014 in Singapore. |

For the first time, FHV2013 is organizing a Latte Art Competition to challenge the artistic expressions of baristas. In a round of 5-minutes intense competition, baristas may prepare as many free pour macchiato and free pour lattes using the grinders, machines, coffee, milk and cup provided; but are required to put forward their best of each to a panel of distinguish judges. The barista with the highest score based on creativity, design and skills will be crowned the winner of the competition.

Organised and certified by the Speciality Coffee Association of Europe (SCAE) – Singapore Chapter, the Basic Barista Course will be held in conjunction with Food&HotelVietnam2013 for the very first time. This is a rare opportunity for aspiring individuals to acquire the necessary skills and knowledge required of a barista, and to gain a head start in pursuing a career in the coffee industry with the globally recognised certification.
The 2-hour course will cover the following topics:
- General coffee knowledge and management
- Use of an espresso machine and a grinder
- Cleaning and maintenance of an espresso machine
- Calibration of a grinder
- Steps to achieving a perfect espresso
- Steps to achieving a perfect stretched milk for milk-based coffee
- Pouring simple latte art

Course fees: USD50 per person (Payment to be made upon confirmation)

Trade professionals and businesses keen to enter Vietnam’s market through franchising should look forward to this not-to-be-missed Franchising Seminar-cum-Workshop that will be held on 25 April 2013, in conjunction with Food&HotelVietnam2013.
